At Fra’Mani’s Berkeley-area kitchen, it’s trimmed by hand, chilled, and ground—a critical step that ensures the best texture. It’s seasoned with Pimenton de la Vera, and then dried and aged for 30 days in a state-of-the-art cellar. All you need to do is slice and savor.
